2007 WHITE MONSTER
The 2007 White Monster choose the left fork in the road, the road less traveled in search of adventure. Dancing to a different tune from its cousin, Lamont’s chardonnay. The monster was pressed straight to barrel for a total solids ferment with oxidative juice handling to produce a distinctive style.
Funky & Forward, the monster underwent full Malolactic fermentation & spent extended aging on lee’s in one hundred percent new oak, both French (60%) & America (40%).
The 2007 vintage was crafted from hand – picked premium fruit from the Chapman’s Creek Vineyard in Wilyabrup, Margaret River.
Harvest Date: 2nd March 2007.
Blend: 100% Margaret River Chardonnay.
Fermentation: Destemmed, pressed straight into 3 new French (Francois Frere) and 2 new American (Seguin Moreau) oak barriques and fermented on full solids (ICV-D47 yeast), 100% malolactic fermentation, three months batonnage (lees stirring) and a further five months barrel maturation.
